Breakfast - Bircher muesli

Bircher muesli with toasted coconuts, grated apple and apple juice mixed throughout. Topped with spiced poached pears, fresh yoghurt and lightly toasted almonds. 

Lunch - Peking duck salad with tamarind dressing

Crispy peking duck on a bed of cucumber, snow pea sprouts and spring onion. Lightly dressed with fresh mango, coriander and a sweet tamarind dressing.

Dinner - Pan-roasted Tasmanian salmon

Pan-roasted Tasmanian Salmon served with creamy cauliflower purée, zucchini, fresh herbs, capers, anchovies and chives.
